Chicken With 40 Cloves of Garlic

Several recipes for the popular French style dish made with chicken, whole garlic cloves, and wine.

James Beard Chicken With 40 Cloves of Garlic
This recipe was given to me the a friend who first introduced me to this dish. It is easier the other recipes on this page because the chicken is not browned before baking. The recipe includes large amount of olive oil compared to the other recipes on this page but you need to add all of it to get the texture and flavor James bear intended. The sauce includes whole garlic cloves, thinly sliced celery, tarragon, vermouth, and a dash of nutmeg. Even if this recipe seems strange, and even if you don't care for cooked celery, try making it as-is the first time. You will probably be pleasantly surprised! I love it that this recipe includes the footnote: "Feel free to use additional garlic cloves if you wish".

Alton Brown Recipe
This recipe only has 4 ingredients if you don't count the salt and pepper: chicken, olive oil, thyme, and whole garlic cloves. The chicken is browned before being baked with the other ingredients for 1.5 hours at 350 degrees F.

Ina Garten Recipe
In this recipe the garlic is parboiled, the chicken is browned before being simmered on the stove for 30 minutes, and the sauce includes cognac, dry white wine, thyme, and cream.

Martha Stewart Recipe
In this recipe the chicken is cooked whole instead of first being cut into pieces. It's a simple recipe that is basically roast chicken with butter, garlic, thyme, and whole garlic cloves cooked in the juices that accumulate during the roasting process. The chicken is roasted at 375 degrees until a meat thermometer registers 160 degrees (usually 45 to 60 minutes).

Nigella Lawson Recipe
This recipe uses chicken thighs only and they are browned before being baked 1.5 hours at 350 degrees F. The sauce includes olive oil, scallions, thyme, whole garlic cloves, and vermouth.

Williams Sonoma Recipe
The sauce for this recipe includes olive oil, whole garlic cloves, fresh rosemary, fresh thyme, lemon zest, white wine, and chicken stock. The chicken pieces are browned before baking at 400 degrees for about 1 hour.
